On-The-Go Sweet Potato Bites

Recently, I converted to a more paleo/primal-like diet. This means that I finally cut quinoa, rice, and oats completely out of my diet. I have one word: Gains.

The changes I began to see in my body were awesome, however after the first week I realized I wasn’t getting enough carbs (for the first time ever) and needed to find more nutrient dense as well as calorie dense forms of carbohydrates.

At the time, school also happened to be starting up and my life was kind of all over the map. Sitting down to cook every meal wasn’t realistic- places to go, people to see.

These on-the-go sweet potato bites were the answer to my calorie deficient prayers and are good enough to eat for breakfast, lunch, and dinner. Winning.

Ingredients:

2 sweet potatoes (skinned and chopped into cubes)

1-1 1/2 tbs Olive oil

1/2 tsp Paprika

1/2 tsp Chili powder

1 tsp Ground coriander

1/2 tsp Salt

Directions:

  • Bake oven to 425 degrees.
  • Mix sweet potatoes in a bowl with the ingredients listed above.
  • Put sweet potatoes on a greased baking sheet and bake for 22-25 minutes.
