4 Ingredient Pancake Recipe

My philosophy when it comes to healthy eating is not ignore your unhealthy cravings. Instead, I like to satisfy them by making a healthier version.

There’s nothing I love more than a thick stack of pancakes at my favorite local brunch here in Charleston, but unlike these pancakes, none of my favorite stacks or gluten/dairy free. Restaurant pancakes always leave me feeling bloated, heavy, and although I still cheat on them somethings, it’s not a meal I can consume on a weekly basis.

This simple pancake recipe however, is quick, easy, and satisfy my pancake cravings. Whipping up healthier alternatives like this one is what helps to keep me on track!

Ingredients:

  • 2 eggs
  • 1 banana (mashed)
  • 1/2 tsp cinnamon
  • 1/2 cup gluten free oats

Directions:

  • Mix together mashed banana and 2 eggs.
  • Add cinnamon.
  • Then add oats and any desired extras such as chocolate chips or blueberries.
  • Flip pancakes every 30-40 seconds. Remove from pan and place a small amount of nut butter on the hottest side of pancake. Let melt, then top with sliced bananas, and continue to stack pancakes.
  • Top with a drizzle of local honey.
