Pb&J Healthy Vegan Peanut Butter Cup Recipe

If you are anything like me, sweets are the hardest to give up while trying to eat healthier. I love chocolate, I love sugar, I love it all.

When you are trying to lose weight or live a cleaner lifestyle, learning to make healthy versions of your favorite treats is key to staying on track.

These vegan friendly Pb&J peanut butter cups are super yummy and your body won’t hate you for them! Another plus- no baking or cooking skills required.

You will need:

  • 1/2 cup Peanut butter or other nut butter of choice
  • 1/2 cup Coconut oil
  • Pinch of salt
  • Jelly of choice (I used strawberry)
  • Optional: Vegan mini chocolate chips
  • Mini muffin pan & mini baking cups

Directions:

  • Begin with mixing the peanut butter, coconut oil, and salt in a food processor or blender.
  • Fill each mini baking cup about 1/4 full of the mixture, then store in freezer for about 15-20 minutes.
  • Remove from freezer, add the jelly, and remainder of the mixture. Sprinkle chocolate chips as desired. Put back in the freezer for about 15-20 minutes.
  • Done! Let sit out for about 2 minutes or so before devouring.
