Busy Bitch Garlic Roasted Broccoli Recipe

I remember when I had to time to guess, test and pull new healthy recipes out of a hat, but that’s just not where I’m ( and possibly all of you ) at right now–after all, a bitch is busy.

I am all about making the best food in the least amount of time possible, which is why I haven’t shared a healthy recipe in some time now. Healthy food that’s fast isn’t necessarily beautiful, motivating or Instagram worthy.

So, I’ve been truckin’ on, serving up rice, salmon and butter lettuce like it was my full-time job–until I started making this roasted broccoli. It’s so fast, easy, and good that I had to share.

It all started with this garlic (crack) seasoning I discovered at one of my lengthier trips to Whole Foods. My addiction began by simply sprinkling (more like drenching, if we’re being honest) it on my salmon before I sautéed.

From there, this seasoning found its way onto my vegetables, chicken and rice–hell I’d put it on anything edible at this point. My body has probably formed an addiction to the high sodium content, but there are worse things I could be doing–right?

Now, I didn’t promise anything elaborate or gourmet here, okay. This is more of a Martha Stuart on serious time constraints kind of recipe–maybe.

However, it tastes like I slaved over this roasted broccoli, which is what really matters here. I don’t even really like broccoli, but I started craving this roasted vegetable over dessert–who am I? Is this was an identity crisis feels like?

The great news is, this roasted broccoli recipe is a wonderful option if you’re HUNGRY and craving mass amounts of food. Maybe you’re thinking one head of broccoli? Or Two? Let me give some advice, here: Follow the stomach, not the heart and you don’t have to share.

  • Heat your oven to 400 degrees
  • Mix olive oil, broccoli and seasoning
  • Bake for 20-30 minutes (time varies depending on your oven type–check frequently after the first 10 minutes)
